For our final Bake the Book class, we are looking at Family Recipes. For those who don't know, Dawn comes from a Sicilian family where just about very meal is a feast. In October's class, Chef Dave will be teaching his version of Dawn's Nana's recipe: Ricotta Cheesecake with Candied Fruit.
This Italian-style cheesecake is a little different from the more traditional American version. It has a fabulous curdy texture from the ricotta, incorporates candied fruit which gives this cake real personality, and a pie crust bottom that stands up to the weight of the cake.
